Ambaina is a glucose that crystalizes into small prismatic and transparent needles, with a slightly pungent and acidic flavour; it is soluble in alcohol: 40 degrees C and 36 degrees C at warm, and in small proportions at cold temperature; little soluble in water and insoluble in sulphuric ether and chloroform. It can be obtained from the alcoholic extract of the white ambaina's fresh peels (Cecropia hololeuca), which belongs to the Cecropiaceae family.
